The big question of the day! We go through times when everything seems to be not what we want for supper. What are you cooking this week? Maybe you could send me what you served your family in the last week. This is what we've eaten recently:
- Wednesday - soup night at church (potato soup and beef stew)
- Thursday - tortilla soup (thanks Natalie! It was the perfect meal for a snowy night
- Friday - ordered pizza
- Saturday - chicken and rice casserole (Nancy Drew's favorite)
- Sunday - fried cube steak
- Monday - Shepperd's pie
- Tuesday - baked potatoes
- Wednesday - meatballs and veggies (at church)
Also, what are your quick, inexpensive, healthy lunch ideas? We get tired of peanut butter and don't want to eat salt laden prepackaged meals.

a quick an easy meal for us (that we often do for lunch due to Ryan's schedule) is oven fried chicken breasts. YUM! You take boneless, skinless chicken breasts and slice them in half horizontally. Dip them in egg wash then into bread crumbs (which I buy unseasoned and add my own seasonings to cut down on salt). Place on pan and drizzle a tiny bit of melted butter on top of them. Bake in 350 oven for about 20-30 min or till cooked through.
Our meals this week are all over the place from chips, crackers and fruit to loaded potato soup to santa fe chicken casserole.
Here is that quiche recipe:
Layer in a pie crust:
1 c. grated cheese
3/4 c. cooked meat (cubed ham, chicken, sausage, or bacon...sometimes I do spinach and/or mushrooms instead)
1/4 c. chopped onion
In a bowl mix:
1 c. evaporated milk (you can use regular milk, but cooking time will be a lot longer)
2 or 3 eggs (depending on the size of your pie plate)
basil or Italian seasoning
1/2 tsp. salt
1/8 tsp. pepper
Pour liquid over meat, cheese and onion. Top with chopped tomatoes and sprinkle with more Italian seasoning. Bake for 30 minutes in a 425 degree oven.
Other favorite lunch meals...
-Burritos: Cook beans overnight in crock pot. When you are ready to re-fry the beans: begin sauteeing chopped onion; blend beans in blender (not too much at a time); add beans, salt and cumin to onions. Fill tortillas with the refried beans and add cheese, sour cream, tomatoes, lettuce, guacamole...whatever you want.)
-Tuna and pasta with veggies and seasonings
-Sausage and Cabbage: I do this in the crock pot, too, but it can be done in the oven. Just mix together chunks of carrots, onions, potatoes, cabbage and Polish Kielbasa Sausage. Pour chicken broth/bullion on top.
Rice and beans. I buy organic canned beans with no salt added (they are .89) and rice which I buy in 25 pound bags at the asian market for $15 ----it lasts FOREVER. We all eat this dish differently. Rachel love cheese on it. My son likes to load cheese, sour cream, salsa and hot sauce on it...it is cheap, yummy and versatile.
You can use whatever kind of beans you have. I like pinto or cannellini beans, my kids like the black beans. ,You can also add cumin to beans while they are cooking or even cilantro. YUM!
Natalie, the evaporated milk made all the difference in the world. It was just what we needed.
Ami, The girls and I love beans too. They like to mash black beans instead of refried beans and put on tortillas.
