What Kind of Mom Forgets to Color Easter Eggs?
You guessed it, me! Last year, I almost forgot and we ended up coloring eggs at 10:00 the night before.
Since I had a dozen boiled eggs in the refrigerator, I went searching for a recipe to use them. It turned out to be an Eggs Benedict Casserole of sorts.
8 slices of hard white bread
10 hard boiled eggs
Several hands full of fresh spinach
about 1/2 cup of bacon bits
1 stick butter
4T flour
1 3/4 to 2 C milk
1/2C sour cream
3/4 to 1t Dijon mustard
3/4 to 1t yellow mustard
1 C shredded cheddar cheese
Butter one side of the bread and place it butter side down in a 9x13. Sprinkle spinach and bacon bits over that. Slice the eggs and layer over the spinach and bacon.
(This part is copied straight from the site as she makes roux a lot more often than I do.) The next step is to make the cheesy mustard sauce to go over the top! This will need to be done in a sauce pan on the stove, as you are basically making a roux. You’ll start the sauce by melting 2T of butter over medium-low heat. Add 1T of the flour and mix it in with the butter (a wire whisk is good for this). Then, slowly add 1/4C of milk and continue stirring. Alternate adding in 1T of flour, followed by 1/4C milk until you have a reasonably thick roux and have used about 4T of flour to about 1 3/4 to 2C of milk. Stir in sour cream & mustard. Then, add 1/2 to 3/4C of shredded cheddar cheese (or cheese of your choice).
Pour the roux over the eggs and top with about a half cup of cheese. I let mine sit for about hour to let the roux sink into the bread, but it can be cooked right away or put in the fridge overnight. Bake at 350 degrees for about 30 minutes, until it starts browning and gets bubbly.
I really liked the change of pace from the typical breakfast casserole. The bread was a little too soggy so I might not let it sit before cooking next time.

While serving those who are sick there are only two choices to make. The choice to serve as Christ or not. Many times the sick and ailing can't or won't be considerate to those helping them. I have to decide how to respond, will I be Christlike or will I become annoyed and feel sorry for myself? On days like today, it is easier to think Christlike. After all, it is Good Friday. Jesus, the Ultimate Servant, suffered and died for those He came to serve. He was spit on and beaten, yet He did not turn away. But in the midst of numerous requests, full trash cans and mounds of dirty laundry, do I remember Christ? Not always.

Valentine's Day
Does it make a person sound more spiritual if they say, "Oh, I don't celebrate Valentine's Day - I tell my wife I love her every day," especially if they say it in a condescending tone of voice?There are plenty of examples of celebrations in Scripture. There were many festivals - festival of booths, Harvest celebrations, David dancing before the Lord when the ark was returned to Israel, etc. It seems that it's okay to celebrate life in special ways. Today, why not say I love you in a more flowery tone with sweet aromas? (Think Song of Solomon.)
The only two examples of birthday parties in the Bible ended very badly, but that doesn't mean we aren't without excuse to celebrate life and big events. It doesn't mean you have to, only that it's okay.
This Mother's Day, try making sure your mom knows that you are grateful that she chose life. On Father's Day, be glad that your father raised you the way He did. I know there could be a lot of baggage there, but God has you where you are for a reason. Learn from it. Be grateful. Be grateful at New Year's that the calendar is still turning for you. Prepare for Resurrection Sunday ahead of time so that your family understands its implications. Glory in the colors of Spring, Summer and Fall. Be thankful for the quietness of Winter mornings.This morning there is a bird chirping outside my window. He may not be telling the love of his life Happy Valentine's Day, but he is certainly bringing praise to His Creator. And no one can deny he is celebrating life today. So put on your pink and tell someone that you love them in an especially sweet way.

Spring Baskets
Every holiday that comes around I have all of these great ideas about how I plan to use that occasion to point the children to Christ. We've had some opportunity to sing songs this week about the death of Christ and had a few really good Bible times in which Lydia actually got the message. I am in the process of putting together the Resurrection Eggs to tell the story of Jesus tonight. I'm sure most parents are like me in that we wish we could do more. Life is very crowded and we have to really work hard to make sure we take the time to teach our children the true meaning of Easter and every other holiday. While we colored eggs last night Lydia and I were able to talk about new life in Christ. The girls got Spring baskets this morning and, yes, they know I put them together. The baskets are usually filled with little things that they need (or want) and I have found on sale over the past few weeks. This morning Aunt Thelma was pretty excited to get her own bunny and talked to it very sweetly while I got her breakfast ready.

Images from Easter
What a glorious day to celebrate the Resurrection of our Lord. We started off with a sunrise service at our home and breakfast with our church family.This is some of the kids in our church gathered in their Easter best. We left our house and went to worship with our dear friends in Baldwin. We can worship there with women who have been faithful Christians for nearly eighty years.


The afternoon was filled with fun and games at Nana and Granddaddy's house with lots of cousins, aunts and uncles. This is Mary with her best cousins examining the loot after the family egg hunt. The next moment had Nana sneaking around to all the kids' baskets to make sure all got a dollar in an egg.

Here is two of the sweetest little boys you'll find. I'm glad God placed them in my family. I get to steal kisses and whenever their moms aren't looking.Rachel's traditional picture with cousin Josh.
