My New Favorite Recipe

And it's Healthy!
Brown Sugar Oat Muffins
1 cup oats
1 cup whole wheat flour
1/2 cup all-purpose flour
2 teaspoons baking powder
1/2 teaspoon salt
2 eggs
3/4 cup brown sugar
3/4 cup milk
1/4 cup vegetable oil
1 teaspoon vanilla extract
In a bowl, combine the first five ingredients. In another bowl, beat eggs, brown sugar, milk, oil and vanilla; mix well. Stir into the dry ingredients just until moistened. Fill greased or paper lined muffins cups two-thirds full.
Bake at 400 degrees for 15-17 minutes or until toothpick comes clean. Cool for five minutes befare removing from pan to a wire rack.
