I have been stuck in a rut in the kitchen again. Abigail still can't eat dairy and a lot of other things, so we were having hamburgers way too often.
I 'googled' a recipe for something with chicken and potatoes and after a few adjustments to use what I had in the pantry, this dish turned out delicious.
Chicken, Sausage and Potatoes
1/2 pound ground sausage browned and drained
Irish potatoes, cut into quarters
olive oil
2 large chicken breast, cut up into bite size chunks
1 small onion, cut up
1/2 bell pepper, cut up
2 tbsp water
salt
dried oregano
pepper
Place potatoes in a large casserole dish and drizzle with 1 tbsp of oil. Bake uncovered, at 425 degrees for about 15 minutes. In a skillet, brown chicken in oil. Add the chicken, sausage, bell pepper, onion, water, salt, oregano, and pepper to the potatoes. Bake uncovered, for 25-30 minutes, or until chicken juices run clear, stirring occasionally.
For this recipe I googled recipes using ground beef, but I had to skip a lot since Abigail can't have any tomatoes either. This is the recipe after I adjusted it to what we had on hand. It was yummy served over spiral noodles and sprinkled with Parmesan cheese.
Italian Meatballs
1/2 cup plain bread crumbs
olive oil
1 onion, diced
2 pounds ground beef
2 eggs, lightly beaten
3 cloves garlic, crushed
sprinkle of parsley
salt
pepper
1/2 tsp rep pepper flakes
1 tsp Italian herb seasoning
2 tbsp Parmesan cheese
Lightly cook onion in the oil. In a large bowl mix together ground beef, onions, bread crumbs, eggs, parsley, garlic, salt, pepper, red pepper flakes, Italian seasoning and Parmesan cheese. (The recipe said to mix it together and put it the fridge for an hour, but I skipped that because I didn't have time.) Using wet or lightly greased hands form meat mixture into balls about 1 1/2 inches in diameter. Place them on a lightly greased baking sheet. Bake at 425 degrees, for 15 to 20 minutes, until browned and cooked through.
