Shrimp and Grits
As it turned out last week we had soup for five days in a row - potato, potato/cheese, potato/cheese/brocoli, chili, white bean chili, white bean chili with rice, taco... Is there any other kinds we missed? It seemed to be the meal of choice this year. We were so tired of soup, we cooked up something I had never tried at home. Shrimp and grits! I had always assumed it would be too expensive for us to cook at home, but it ended up not too bad since all I had to buy was the shrimp, which was on sale. The shrimp was the only thing in the recipe that we don't normally have in house on a regular basis. And any time grits are on the menu Lydia is thrilled. This is the recipe I used with only a few adjustments. I added garlic powder to the grits and left the cheese on the side for the kids to add as they wanted.
